Usually you will have stereo tracks when you record, even you record mono. For guitar work, as I have multiple guitars, I'll record both in the rythem I want, and say keep Guitar 1 on the left channel and Guitar 2 on the right, ditching the other tracks (Guitar 1 right and Guitar 2 left).

Thing to remember is there are no hard and fast rules about recording....you might be trying to record and get an unexpected, but neat result LOL
